I love cookies...so many different varieties of them. At the end of May we had a day at the park with our Sunday School children; I decided to make chocolate chip cookies - they're quick, easy, and most children will eat chocolate ones! One of the kids wouldn't believe they were made, he was convinced they were shop bought... I'd say they enjoyed them!
So here's the recipe:
(mine made about 30)
Ingredients:
2 1/4 cups plain flour1 tsp bicarbonate of soda
1 tsp salt
1 cup butter softened (I prefer using 1/2 cup trex, 1/2 cup 'I Can't Believe it's Not Butter')
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp vanilla extract
2 large eggs
2 cups chocolate chips
~ Preheat oven to 375 F (190/180 C.)
~Combine flour, bicarbonate of soda, and salt in a small bowl.
~Beat butter, granulated sugar, brown sugar, and vanilla extract in large mixer bowl till creamy.
~Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture.
~Stir in chocolate chips.
~Drop by rounded tablespoon onto ungreased baking sheets...
...and bake for 9-11 minutes or until golden brown.
~Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
