Chocolate Chip Cookies



I love cookies...so many different varieties of them. At the end of May we had a day at the park with our Sunday School children; I decided to make chocolate chip cookies - they're quick, easy, and most children will eat chocolate ones! One of the kids wouldn't believe they were made, he was convinced they were shop bought... I'd say they enjoyed them!

So here's the recipe:

(mine made about 30)


Ingredients:

2 1/4 cups plain flour
1 tsp bicarbonate of soda
1 tsp salt
1 cup butter softened (I prefer using 1/2 cup trex, 1/2 cup 'I Can't Believe it's Not Butter')
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp vanilla extract
2 large eggs
2 cups chocolate chips


~ Preheat oven to 375 F (190/180 C.) 

~Combine flour, bicarbonate of soda, and salt in a small bowl.

~Beat butter, granulated sugar, brown sugar, and vanilla extract in large mixer bowl till creamy. 

~Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture.

~Stir in chocolate chips. 

~Drop by rounded tablespoon onto ungreased baking sheets...

...and bake for 9-11 minutes or until golden brown.
~Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Malteser Truffles


I absolutely love Maltesers. There's just something so addictive about them that when I start on them I just can't stop. Anyway, I wanted to make something with them in last week, so I randomly made up these 'maltester truffles'. They were eaten {not just by me} basically as soon as I'd finished making them, so I'd say they were quite successful!
So here's what I did, and some - quite a few actually - pictures of the process!

{I didn't really keep track of how much of everything I was using, so it will just be estimates, but you can just use however much you think you'll need to get it how you'd like.}

Ingredients:
  • Maltesers
  • Betty Crocker Vanilla Icing
  • Milk Chocolate

1. Pour the Maltesers {I used a 300g bag} into a plastic bag, like in the above picture, and bash them up with a rolling pin until all the Maltesers have been smashed {but not crushed into dust!}.

2. Put the smashed Maltesers into a bowl, and mix in some of the Vanilla Icing {I think I must have used about 1/2 or 3/4 of the tub} until you get the desired consistency {you'll want all the Maltesers to be mixed in, but the mixture to be quite thick.}

3. Roll the mixture into balls in the palm of your hand {about 1 inch thick, or however big/small you want them}, and place on a baking tray covered in greaseproof paper. Put this in the fridge and leave them to firm up {I just left mine overnight.}

 4. Take out the fridge when firm, and put cocktail sticks into the Malteser balls.


5. Break up pieces of milk chocolate into a microwavable bowl and microwave until melted - be careful not to burn the chocolate! {Or melt the saucepan way if that's what you prefer.}

 6. Dip each truffle ball until covered in melted chocolate, and remove the cocktail stick straight after being dipped. When you've covered them all, place the tray back in the fridge to leave the chocolate to set.


7. All that's left to do now is to take them out the fridge when the chocolate's firm, and eat away!

{I only half-coated some of my Malteser Truffles in chocolate, simply because my chocolate ran out! But they still looked - and tasted - lovely! ~ Enjoy!}

Oreo Brownies.

So here's my first proper post, and yes, it's about food - Oreo brownies to be precise.

My Gran came over for tea last night, we had a lovely salmon dinner, and then my sister - Jenna - decided she wanted to try making some oreo brownies she'd tried (and loved) not too long ago. They worked really well and tasted fabulous. Everyone loved them, and even Dad wanted extras! They were SO easy, I can see us making these quite often...

Here's what she did, and a picture of how they turned out:


Ingredients:
  • A  box of your favourite brownie mix. (She used Betty Crocker Brownie Mix)
  • A pack of oreos.
  • Betty Crocker Vanilla Icing (or whichever you like best)

How it's done:
  1. Empty the pack of oreos into a plastic bag and smash them up with a rolling pin.
  2. Mix up the box of brownie mix, and mix some of the oreos in with the brownie mixture. (she used about half the oreos.)
  3. Bake mix for as long as instructed on the box, and leave to cool when taken out the oven.
  4. When the brownie is cool, spread with as much icing as desired and sprinkle the remaining oreos on the top.

My Blog Inspirations.

Well this is my first post, so I'll try and briefly describe what my blog's about.

As I go through life there's a lot of things I take delight in, a lot of it being food, but other things aswell. When I get spare time I like to sing, practice guitar, exercise etc. ...but mainly bake/try out new recipes. A lot of the recipes I try come from blogs, Pinterest, or friends...and I lose track of the ones I've tried out and how they turn out. So, I simply decided to start this blog to write about the recipes I try and if they work well! I may post about other things that delight me from time to time, but mainly the food I love and want to share! =)
